Why "Citron Caviar"?
Well, what’s in a name, this name?
I say “citron”, you say “yes, that’s a lemon”.
I say “caviar”, you say “yes, I know what that is”.
But did you know that there is actually such a thing as a “citron caviar”, aka a “caviar lime” or “finger lime” in English? It’s actually an Australian citrus fruit with juice vesicles inside that look like caviar!
It’s those vesicles or pearls that release a citrussy burst of flavour on the tongue to give a kick to the simplest of dishes.

It was these three analogies that appealed to me. I was looking for a strong, disruptive brand that would catch the eye in a field of generally standardised, even academic names.
